Black Bean and Mushroom Burgers

I have been making a lot of burger/patty style foods for dinner lately.  I have found they are easy for my 9 month old to grasp, and my toddler enjoys eating them as well.  Most of these ingredients I already had on hand, so it was easy to cook up these black bean and mushroom burgers.  If you want more of a lumpy texture, mash the bean mixture with a potato masher or fork rather than using a food processor.

Baked Shrimp Patties

My daughter Alex is 9 months old and the only highly allergenic food we had not tried at this point was shell fish.  No particular reason, other than it was a bit more difficult to prepare than some of the others.  New research recommends that the top eight allergens (milk, eggs, fish, shellfish, peanuts, tree nuts, soy and wheat) be introduced early as babies start on solid foods.  I had a bag of frozen shrimp and decided to try my hand at these patties.

Easy French Toast Bake

Mornings are almost always stressful at our house.  If the kids sleep until 6am, we consider ourselves lucky.  I love french toast and pancakes, but just don't have the time (or energy) to stand over the stove in the morning.  Breakfast usually needs to be on the table 5 minutes ago.  I love a dish that I can make ahead, or at least prepare and then pop in the oven in the morning. The preparation on this one is fast.   Another plus: my daughter is allergic to scrambled eggs, but tolerates baked eggs, so both girls can enjoy this dish.

Chicken and Vegetable Instant Pot Meatballs

This recipe was inspired by my 3-year old daughter's wonderful preschool teacher.  She is so sweet, and often brings extra of whatever she has in her lunch to share.  She told me she shared some meatballs and broccoli with my daughter, who loved it, so I decided to recreate meatballs similar to her description, loaded with veggies, that my 7 month infant could eat too.
