Easy French Toast Bake

Mornings are almost always stressful at our house.  If the kids sleep until 6am, we consider ourselves lucky.  I love french toast and pancakes, but just don't have the time (or energy) to stand over the stove in the morning.  Breakfast usually needs to be on the table 5 minutes ago.  I love a dish that I can make ahead, or at least prepare and then pop in the oven in the morning. The preparation on this one is fast.   Another plus: my daughter is allergic to scrambled eggs, but tolerates baked eggs, so both girls can enjoy this dish.  


French Toast Bake

Ingredients:

  • 4 slices thick bread, cut into strips (we used challah)
  • 1/4 cup milk (your favorite kind: almond, cow's, soy, etc.)
  • 3 eggs
  • 1/2 tsp cinnamon
  • 1 tsp vanilla

Directions:

  1. Pre heat oven to 350 degrees F
  2. Wisk eggs and milk in a medium sized bowl
  3. Add cinnamon and vanilla and mix well
  4. Put bread in bowl and using hands mix well until bread is moised
  5. Using a well greased loaf pan, add bread 
  6. Bake about 15-20 minutes, until cooked through
