Black Bean and Mushroom Burgers

I have been making a lot of burger/patty style foods for dinner lately.  I have found they are easy for my 9 month old to grasp, and my toddler enjoys eating them as well.  Most of these ingredients I already had on hand, so it was easy to cook up these black bean and mushroom burgers.  If you want more of a lumpy texture, mash the bean mixture with a potato masher or fork rather than using a food processor.


Black Bean and Mushroom Burgers

Ingredients:

  • 2 cups cooked or canned black beans, drained and rinsed
  • 1 package mushrooms
  • 1/2 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 cup quick cook oats
  • 1 tsp garlic and herb seasoning

Directions:

  1. Saute mushrooms, garlic and herbs
  2. Allow to cool and add mushroom mixture and black beans to blender or food processor
  3. Transfer mixture to a large bowl and mix in oats and seasoning
  4. Roll into balls and flatten into patties
  5. Bake at 350 F for 10 minutes on a well greased baking sheet or on parchment paper
  6. Enjoy with a burger bun, bread or your favorite grain
