Easy Baked Blueberry Oat Bars

Do you ever wake up in the morning and your first thought is one of dread: what am I going to serve for breakfast today? I like to make sure our daily breakfasts have variety, to keep things interesting for all of us. I have been making a version of my baked oat bars for a while now. They are a nice variation to serving oatmeal, and they contain egg (which increases morning protein consumption). My favorite part about this recipe is that I use frozen blueberries, so I don’t need to make sure I have fresh fruit on hand. I also love that it does not contain added sugar. These aren’t super sweet but still taste great. They are easy to make and once prepped, cook in the oven and don’t need to be watched (my kids, however, are another story…).


Easy Baked Blueberry Oat Bars

Ingredients:

  • 1 and 1/4 cup oats (quick cook or old-fashioned)

  • 1/2 tsp baking powder

  • 1/4 tsp cinnamon

  • 1 cup frozen blueberries

  • 1 cup milk

  • 1 egg

  • 1/2 tsp vanilla

Directions:

  1. Pre-heat oven to 350 Fahrenheit

  2. In a medium bowl, add first three ingredients: oats, baking powder and cinnamon and mix well.

  3. Add blueberries to mixture.

  4. Grease (using cooking spray or oil) an 8” glass pyrex or glass baking dish and add mixture, try to evenly distribute mixture throughout the dish.

  5. Using the same medium bowl, beat the egg and add remaining ingredients. Mix well.

  6. Pour the wet mixture on top of the dry, evenly distributing the liquid and making sure all parts of the dry mixture is now wet. Add a little extra milk if needed, to be sure oat mixture is soaked throughout.

  7. Bake in oven for about 20-25 minutes, until cooked through.

  8. Enjoy immediately, or freeze and have on hand for an already made breakfast. Keeps for 2-3 months in the freezer.
