Banana Nut Butter Bites

It’s been a while since I have posted a new recipe. When busier seasons of life occur I tend to stick to my favorite recipes, but I am now feeling a bit more creative in the kitchen. And my creativity is back with these delicious banana nut butter bites.

These were originally inspired by dessert hummus that have been popping up in recipes at the store (if you haven’t tried Trader Joe’s dessert hummus, I highly recommend this). Most of these versions are made with chickpeas, and on the sweeter side. I wanted to create the dessert hummus feel, but in a snack version that can be eaten without a spoon (because using hands when eating is fun). These are easy, sweetened only with dates and banana, and can be eaten on the go or at home, for a delicious and nutritious snack. Enjoy.


Banana Nut Butter Bites

Ingredients:

Banana nut butter bites
  • 1 can chick peas (15 oz), drained and rinsed

  • 1 ripe, medium banana

  • 4-5 dates, soaked in warm water for about 10 minutes

  • 1 tsp vanilla

  • 1/4-1/2 cup nut butter (use as much or as little, depending on how much you like your nut butter flavor)

Directions:

  1. Pre-heat oven to 350 and line a baking sheet with non-stick spray or parchment paper.

  2. Add all ingredients to food processor or blender and blend.

  3. You may need to blend for a bit, then scrape down the sides of the food processor or blender, and do this a few times, as the ingredients are sticky.

  4. Roll into about 1” in diameter balls and place on the baking sheet.

  5. Bake for about 10 minutes.

Note: these don’t necessarily need to be baked, and you can use this as a sweet dip with fruit. In fact, try them both ways and expose your children to the same food in new ways.
