Sweet Potato Cookies

I had a few leftover sweet potatoes but no ripe bananas and wanted to make something slightly different from my Mini Sweet Potato Banana Muffins.  Sweet potato cookies?  Sounded good to me!  And definitely toddler approved!

Ingredients:

- 1 medium sweet potato, cooked and mashed
- 1/2 cup oats
- 1 egg
- 2 tbsp honey or sweetener of choice
- 1/2 tsp vanilla
- 1/2 tsp cinnamon
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- Sprinkle of salt
- Optional mix ins: chocolate chips, chia seed, flax seed, raisins, your favorite nut butter

 

 

Directions:

1.  Pre heat oven to 350 degrees
2.  Place mashed sweet potato into a medium size bowl and mix in oats
3.  Add egg, sweetener, vanilla (and any optional mix ins) and mix well
4.  Add the remainder of the ingredients and stir until mixed through
5.  Using a well greased cookie sheet or cookie sheet lined with parchment paper, drop about 1 tbsp of batter onto sheet, slightly flattening cookies
6.  Bake for 10 minutes, flip, and bake for another 10 minutes until cooked through
