Mini Sweet Potato Banana Muffins

These little bites of goodness contain a variety of nutrients - Vitamin A, C and more from the sweet potato, the benefits of banana mentioned above, and healthy fats from the egg and nut butter.  Up until the age of 2, toddlers should be getting about 50% of their calories from fat.  I added chia seeds into mine, for a little extra DHA punch.  These are also great on the go and seem to freeze very well.  Snacks can be hit or miss in our house and I love when I hit a home run!
