Strawberry oat bake

We have been making an oat bake at least weekly for the past few years. It’s a really fun variation to traditional oatmeal, super easy, and can be modified based on the ingredients you have on hand. Best of all, this oat bake tastes great with frozen fruit. Our most recent oat bake included frozen strawberries and this strawberry oat bake did not disappoint.

At the time of writing this, we are currently in quarantine. Many of the foods that were previously easily accessible are no longer easy to obtain. Many parents are feeling concerned with their child’s nutrient intake. In this recipe I added some fortified infant cereal. It can be a nice way to add some vitamins and minerals. Many of these cereals include vitamins like iron, B-vitamins, zinc, calcium and more.

Strawberry oat bake

Strawberry Oat Bake

Ingredients:

  • 1 cup milk

  • 1 egg

  • 3/4 cup quick cook oats

  • 1/4 cup infant cereal (or substitute additional oats)

  • 1/2 tsp vanilla

  • 1 cup frozen strawberries, diced

  • 1 tbsp honey (optional, for added sweetness)

Directions:

  1. Preheat oven to 350 and grease a square oven safe dish or bowl (I use a 4x4 pyrex dish, but anything around this size will work)

  2. Add egg and milk to a medium size bowl and mix well.

  3. Add oats, infant cereal and mix, then add the remaining ingredients and mix well

  4. Place oat batter into oven safe dish for about 15 minutes or until cooked through.

  5. Let cool and cut into squares. Enjoy the strawberry oat bake!
