Chickpea Chocolate Muffins

If you have been following my recipes, you know I am a huge fan of DIY muffins. My creations are all really simple, and make for a great snack or addition to a meal. I am also a huge fan of unsweetened cocoa powder - it’s a great way to add in a nice chocolatey flavor to baked goods, without any added sugar. I also love when I am able to add not-so-traditional ingredients into baked goods, chick peas in this instance. These muffins were a huge hit with my family - and I hope you love them as well!

Chickpea Chocolate Muffins


  • 1 can chick peas, rinsed and drained

  • 1 cup packed pitted dates, soaked in warm water 10 mins

  • 1/3 cup nut butter

  • 1/4 cup milk or water

  • 2 tbsp unsweetened cocoa powder

  • 1/4 tsp vanilla


  1. Preheat oven to 350F and spray oil onto mini muffin tin

  2. Add first 4 ingredients to a blender and blend well

  3. Add remaining ingredients and blend

  4. Bake for 15-18 minutes or until cooked through (note the consistency will remain a fudge-like after baking)
