Kid-approved Spinach and Banana Blender Muffins


Spinach muffins are popular - and rightfully so: they are an easy snack to create and full of vitamins and minerals from the spinach like vitamin K, vitamin B6, vitamin C, iron, calcium, and potassium (just to name a few). Spinach is a food that some kiddos have yet to acquire a preference for in it’s natural state (although don’t give up - keep offering!).   I never quite found my favorite recipe, I wanted to create something without refined sugar, but also that I could fully create in the blender, so I decided to create my own. These were delicious (all members of the family agreed) and made with only 8 ingredients, many of these ingredients you may already have at home! ** note: I don’t “hide” the spinach or “trick” my kiddos into eating these. They know the spinach is there and enjoy them. My daughter has said: “I don’t like spinach, but I like it in muffins”. Go figure!

Blender Spinach and Banana Muffins



  • 2 cups fresh spinach

  • 2 ripe bananas

  • 1/3 cup almond milk (or your favorite milk)

  • 1/4 cup oil

  • 1 egg

  • 1.5 cups oats

  • Dash cinnamon

  • 1/2 tsp baking powder

1. Pre-heat oven to 350 degrees F
2. Add first 5 ingredients to blender and blend until well incorporated
3. Add oats and cinnamon and blend until mixed well
4. Add baking powder and blend until mixed throughout batter
5. Using a well greased mini-muffin tin, add a heaping tbsp into each tin
6. Bake for about 15 minutes, or until cooked through
7. Enjoy! Serve immediately or freeze for up to 2-3 months
