Green Juice Cookies


I started the morning by whipping up a batch of green juice. I blended together kale, apple, pear and lime. Since I don’t have a juicer, I made this in the blender and it was really more like green pulp. Although I thought it was delicious, my kids weren’t into it. I did not want it to go to waste, so got creative and made it into a form of cookie. We took these to the park as a snack and the girls loved them. A great way to use leftover juice or smoothie! I am a HUGE fan of repurposing food.

Green Juice Cookies


  • 1 banana, mashed

  • 1 egg

  • 1/2 cup green juice, pulp or smoothie (mine contained kale, apple, pear and lime, blended together in my VitaMix)

  • 1/4 cup teff (I add this for a bit of added nutrition, you can use whatever flour you have on hand, or skip it and add extra oats)

  • 1 cup oats

  • 1/4 tsp baking powder


  1. Pre-heat oven to 350 F

  2. In medium bowl, mash banana

  3. Add egg and mix well

  4. Add the remainder of the ingredients until well incorporated

  5. Spoon onto well greased baking sheet and bake for about 12-15 minutes or until cooked through. Enjoy!
