Amaranth Breakfast Cookies


This recipe is almost exactly the same as my amaranth porridge, but flattened and baked (easy grab for little hands).  I used a chia egg, as my daughter appears to have an egg allergy, but this would probably work with an egg as well.


  • 1 cup cooked amaranth using the basic amaranth recipe above
  • 1 chia egg (1 tbsp chia seed + 3 tbsp water, mixed together and allowed to set for about 10 minutes)
  • 1 tsp cinnamon
  • 3/4 cup applesauce


  1. Set oven to 350 degrees fairenheight
  2. Combine above ingredients in a medium size bowl and mix well
  3. Using a well greased cookie sheet, place about 1-2 tbsp in heaping amounts on the sheet
  4. Bake for 20-25 minutes, flipping half way through
  5. Enjoy!  The final product will be a bit soft, but perfect for babies just starting out eating (although my toddler loved them too!)
