Monster Cookies

This morning my daughter woke up and told my husband and I she was a monster.  She needed something fit for a monster, that was also packed with nutrition (and easy to prepare!).  Sometimes, it's all about presentation and having fun!  These cookies are really anything but a traditional cookie.  If you have been following my blog or my instagram for any length of time, you know my obsession with teff.  It's a super versatile grain, packed full of nutrients like fiber, calcium, iron and B vitamins,  Monster Cookies were born.



  • 2 cups fresh spinach (or any other grated vegetable like carrots or zucchini)

  • 3 tbsp shredded coconut, unsweetened

  • 1 ripe banana

  • 1 tbsp black strap molasses

  • 1 tbsp molasses

  • 1 tbsp vegetable oil

  • 1 egg or flax egg (for a flax egg, combine 1 tbsp ground flax with 3 tbsp water and let set in the refrigerator for 15 minutes)

  • 1/2 cup whole wheat flour

  • 1 cup teff flour (or your favorite flour)

  • 1 tsp baking powder


  • Preheat oven to 350 degrees F

  • Add first 7 ingredients to blender and blend until smooth

  • Add remaining ingredients and blend until mixed well

  • Drop by large spoonful onto greased pan

  • Bake for 15-20 minutes or until edges start to brown
