Summer Salads

There is nothing I love more than a cool salad in the middle of summer.  Sure, it may not get above 85 degrees during our nice San Diego summers, but that doesn't mean a cool and easy salad won't hit the spot.  After a long day's work, a little chopping and mixing can provide you with a great meal.  To me, a salad is a salad is never only a bowl of lettuce, it is a hearty, filling delicious mix of produce, grains, and healthy fats.  Here are a few of the salads I have been enjoying this summer:

Watermelon, Tomato and Red Onion Salad with Shallot Dressing

Get your fresh seasonal summer red fruits and veggies in for the day with this salad!

In the mix:

- Chopped Tomato

- Thinly Sliced Red Onion

- Chopped Watermelon

- Fresh spinach

Dressing:

I recently enjoyed this salad with a Shallot Vinaigrette from The Food Network

Modify to your hearts desire.  I added some quinoa on top for grains and protein:

Enjoy :).  Works great as a leftover lunch the next day too!

Spinach, Garbanzo, Avocado Goodness

In the mix:

- Spinach

- Chopped Cumcumber

- Chopped Onion

- 1 can Chickpeas

- Sliced Cherry Tomatoes

- Chopped Avocado

Combine all ingredients with a bit of your favorite vinegar and oil.  This hearty salad will keep you full for hours and contains lots of healthy fats from the beans and avocado.

My husband and I came back from a run and were famished!  We needed something to hold us over until we had time to get cleaned up and make ourselves a proper breakfast.  What could be better than combining some fruits and veggies for a quick tasty salad?

In the mix:

- Orange segments

- Sliced Avocado

- Diced Roasted Beets

Dressing:

- Soy sauce

- A dash of olive oil

The combination of sweet and savory in this salad was awesome!  And look at all the beautiful colors (think: lots of phytonutrients) with only three ingredients?
